Happy Summer Solstice! Celebrate with a Raspberry & Elderflower Bellini
Welcome in the longest day of the year with a delicious Kombucha mocktail!
Recipe by Mairi Rivers AKA Ginger Vegan
- 3 white flesh peaches
- Squeeze of lemon juice
- 1 tsp sugar
- 1 bottle Raspberry & Elderflower Kombucha
- Raspberries, elderflowers and peach slices to garnish
First make the peach puree by blending the stoned peaches together with the lemon juice and sugar. Alternatively, you can press the peaches through a sieve and then mix with the lemon and sugar.
Fill 2 tall glasses with ice, add a couple of raspberries and elderflower sprigs and then pour over the peach puree. Top with raspberry and elderflower Kombucha and garnish with a slice of peach and a sprig of elderflowers.
